If you’re a big fan of Kentucky Fried Chicken, we’ve got some good news: you actually don’t have to visit a store or order online just to enjoy their crispy chicken. In fact, you can cook it straight from your own kitchen.

In a Reader’s Digest feature, we get to learn the 11 secret spices that are used to make fried chicken “extra crispy” and to recreate the “traditional flavor” KFC has always been known for. As a matter of fact, the article promises you won’t “even be able to taste the difference.”

To get this done, you will need to mix KFC’s secret recipe with two cups of flour. Use this mixture to coat all the chicken before dipping them in egg and milk.

Here’s the 11 secret spices

  1. 2/3 tablespoon salt
  2. 3 tablespoons white pepper
  3. 1 tablespoon black pepper
  4. 1/2 tablespoon basil
  5. 1 tablespoon celery salt
  6. 1 tablespoon dried mustard
  7. 2 tablespoons garlic salt
  8. 1 tablespoon ground ginger
  9. 1/3 tablespoon oregano
  10. 4 tablespoons paprika
  11. 1/2 tablespoon thyme

    Although some would tell you to allow the coated chicken to sit before frying, one thing you need to know about KFC is that they have a “from flour to fryer” rule which literally means you should start cooking the meat right away.

    Besides, letting it sit will only result to softening of the breading and that will likely lessen the crispiness.

    Another reminder: deep fry at high temperature.

    Although KFC uses industrial-strength pressure fryers, you can try to replicate a similar result by using “a deep fryer, a Dutch oven, or a heavy-bottomed pot” shared RD. Just make sure to heat the oil 350 to 360 degrees and then cook each chicken for 12 minutes.

    Meanwhile, author Ron Douglas (who wrote America’s Most Wanted Recipes) said one of the key ingredients to achieve the crunchy texture is to use monosodium glutamate (MSG) flavor enhancer such as Accent.
